  1. 1. Mix lemon juice, a pinch of salt, some pepper, and olive oil in a large bowl.
  2. 2. Remove the tough outer leaves and cut off the stems. Remove the pointed tips. Cut the artichokes in half lengthwise and remove the fuzzy inner part (the choke).
  3. 3. Slice the artichokes thinly lengthwise. Add them immediately to the dressing and toss to prevent browning. Plate the salad and crumble the Parmesan on top.
