🍽️ Fresh Artichoke Salad with Parmesan

Ingredients
- Juice of 2 lemons
- salt
- pepper from the mill
- 8 tbsp olive oil
- 6 small, tender artichokes (60–80 g each)
- 100 g Parmesan
Instructions
- 1. Mix lemon juice, a pinch of salt, some pepper, and olive oil in a large bowl.
- 2. Remove the tough outer leaves and cut off the stems. Remove the pointed tips. Cut the artichokes in half lengthwise and remove the fuzzy inner part (the choke).
- 3. Slice the artichokes thinly lengthwise. Add them immediately to the dressing and toss to prevent browning. Plate the salad and crumble the Parmesan on top.
