🍽️ Fried Artichokes with Jerusalem Artichokes

Ingredients
- 500 g Jerusalem artichokes
- 400 g small artichokes
- 3 tbsp lemon juice
- 3 tbsp olive oil
- 1 clove garlic
- salt
- pepper (from the mill)
- dill tips (for garnishing)
Instructions
- 1. Wash the Jerusalem artichoke tubers thoroughly and place them in a pot with cold water. Bring the water to a boil and cook the tubers for about 20 minutes until they still have a slight bite.
- 2. Drain the water, rinse the tubers briefly with cold water and let them drain well. Peel the Jerusalem artichokes and leave them whole or halve them depending on their size.
- 3. Clean the artichokes, cut them lengthwise into quarters or eighths (depending on size) and drizzle with lemon juice.
- 4. Heat olive oil in a pan, peel the garlic and press it in. Add the artichoke and Jerusalem artichoke pieces and fry everything, turning occasionally, for about 10 minutes.
- 5. Season with salt and pepper and serve the dish garnished with dill tips. Herb quark goes perfectly with it.
