  1. 1. Wash the Jerusalem artichoke tubers thoroughly and place them in a pot with cold water. Bring the water to a boil and cook the tubers for about 20 minutes until they still have a slight bite.
  2. 2. Drain the water, rinse the tubers briefly with cold water and let them drain well. Peel the Jerusalem artichokes and leave them whole or halve them depending on their size.
  3. 3. Clean the artichokes, cut them lengthwise into quarters or eighths (depending on size) and drizzle with lemon juice.
  4. 4. Heat olive oil in a pan, peel the garlic and press it in. Add the artichoke and Jerusalem artichoke pieces and fry everything, turning occasionally, for about 10 minutes.
  5. 5. Season with salt and pepper and serve the dish garnished with dill tips. Herb quark goes perfectly with it.
