🍽️ Artichokes with Legumes

Ingredients
- 400 g broad beans
- 800 g peas
- 2 garlic cloves
- 8 artichokes
- 1 bunch dill
- 1 lemon
- juice of one lemon
- 4 tbsp olive oil
- salt
Instructions
- 1. Squeeze the halved lemon into a bowl with approx. 1 liter of water.
- 2. Break off the stems of the artichokes and remove the coarse outer leaves.
- 3. Cut off the tips, trim the bases round and scrape out the tough inner part with a spoon. Cut the bases into quarters and place them in the lemon water.
- 4. Finely chop the dill, but keep a few tips for decoration.
- 5. Steam the vegetables in a steamer insert for approx. 8-10 minutes. Remove them, mix in a bowl with lemon juice and oil, season with salt and stir in the dill. Plate and decorate with the dill tips.
- 6. Serve with flatbread as desired.
