🍽️ Spanish Omelette with Artichokes

Ingredients
- 220 g artichoke hearts (can; drained weight)
- 1 onion
- 1 garlic clove
- 100 g cherry tomatoes
- 3 eggs
- 6 tbsp milk (1.5% fat)
- salt
- pepper
- 0.5 tsp tomato paste
- 1 tsp olive oil
- 50 g mild sheep's cheese (9% fat)
Instructions
- 1. Place the artichoke hearts in a colander, let them drain well, and then cut them in half.
- 2. Peel the onion and garlic, and chop both into very small cubes.
- 3. Wash the tomatoes and cut each one in half.
- 4. Whisk the eggs with the milk, salt, pepper, and tomato paste in a bowl until well combined.
- 5. Heat the oil in a non-stick pan. Sauté the onions and garlic over medium heat, add the artichokes, and fry them briefly.
- 6. Reduce the heat. Add the tomatoes to the pan and pour the egg mixture over everything. Cover the tortilla and let it set over low heat for 6 to 8 minutes.
- 7. Meanwhile, cut the cheese into small cubes. Carefully flip the tortilla using a spatula, sprinkle the feta cubes on top, and let them melt briefly. Cut the tortilla into pieces and serve with dark bread if desired.
