🍽️ Artichokes with Spicy Dip

Ingredients
- 4 artichokes
- 1 untreated lemon
- 6 tbsp olive oil
- 2 tbsp white wine vinegar
- salt
- pepper (from the mill)
- 2 garlic cloves
- 2 tsp chopped parsley
Instructions
- 1. Cut off the top and stem of the artichokes.
- 2. Rub the cut surfaces immediately with half a lemon to prevent them from turning brown.
- 3. Fill a large pot with boiling water and add the other half of the lemon.
- 4. Place the artichokes in the water and cook over low heat for about 30 minutes.
- 5. Check if the leaves can be easily pulled out, then they are done.
- 6. Mix oil, vinegar, salt, and pepper in a bowl to make a marinade.
- 7. Peel the garlic and press it into the marinade.
- 8. Stir the parsley into the mixture.
- 9. Season the dip to your taste.
- 10. Let the cooked artichokes drain well.
- 11. Place the artichokes on plates.
- 12. Serve them together with the vinaigrette dip.
