  1. 1. Cut off the top and stem of the artichokes.
  2. 2. Rub the cut surfaces immediately with half a lemon to prevent them from turning brown.
  3. 3. Fill a large pot with boiling water and add the other half of the lemon.
  4. 4. Place the artichokes in the water and cook over low heat for about 30 minutes.
  5. 5. Check if the leaves can be easily pulled out, then they are done.
  6. 6. Mix oil, vinegar, salt, and pepper in a bowl to make a marinade.
  7. 7. Peel the garlic and press it into the marinade.
  8. 8. Stir the parsley into the mixture.
  9. 9. Season the dip to your taste.
  10. 10. Let the cooked artichokes drain well.
  11. 11. Place the artichokes on plates.
  12. 12. Serve them together with the vinaigrette dip.
