  1. 1. Squeeze the lemon. Wash the artichokes, remove the tough outer leaves and stems. Cook them in salted water with the lemon juice for 15 minutes until tender.
  2. 2. In the meantime, mash the Roquefort cheese with a fork and mix it with the sour cream.
  3. 3. Wash the parsley, shake it dry, pluck off the leaves and chop them finely. Stir the parsley into the dip. Coarsely crush the peppercorns and sprinkle them on top.
  4. 4. Halve the artichokes and serve them with the cheese dip.
