🍽️ Steamed Artichokes with Creamy Yogurt-Dill Sauce

Ingredients
- 2 artichokes
- 2 thick lemon slices
- 250 g yogurt
- 1 tsp mustard
- 2 garlic cloves
- 0.5 bunch dill
- 4 lemon wedges
Instructions
- 1. Rinse the artichokes under running water.
- 2. Trim off the bottom stem ends.
- 3. Trim the pointed leaf tips with a knife.
- 4. Rub all cut surfaces with half a lemon to prevent browning.
- 5. Tie the artichoke heads together with kitchen twine to keep them from opening during cooking.
- 6. Bring a large pot of water to a boil.
- 7. Place the prepared artichokes into the boiling water.
- 8. Cover the pot and let the artichokes cook for 40 minutes.
- 9. Mix the yogurt with the mustard in a small bowl.
- 10. Press the garlic directly into the yogurt mixture.
- 11. Season the sauce generously with salt and pepper.
- 12. Wash the dill under running water.
- 13. Finely chop the dill.
- 14. Save a few nice dill sprigs for decoration.
- 15. Stir the remaining chopped dill into the yogurt cream.
- 16. Carefully remove the cooked artichokes from the water.
- 17. Let the artichokes drain.
- 18. Remove the kitchen twine and lemon slices.
- 19. Scrape out the soft inner leaves and fine hairs from the core using a teaspoon.
- 20. Fill the hollowed-out artichokes with the yogurt cream.
- 21. Garnish the artichokes with the saved dill sprigs.
- 22. Serve the artichokes with fresh lemon wedges.
