  1. 1. Rinse the artichokes under running water.
  2. 2. Trim off the bottom stem ends.
  3. 3. Trim the pointed leaf tips with a knife.
  4. 4. Rub all cut surfaces with half a lemon to prevent browning.
  5. 5. Tie the artichoke heads together with kitchen twine to keep them from opening during cooking.
  6. 6. Bring a large pot of water to a boil.
  7. 7. Place the prepared artichokes into the boiling water.
  8. 8. Cover the pot and let the artichokes cook for 40 minutes.
  9. 9. Mix the yogurt with the mustard in a small bowl.
  10. 10. Press the garlic directly into the yogurt mixture.
  11. 11. Season the sauce generously with salt and pepper.
  12. 12. Wash the dill under running water.
  13. 13. Finely chop the dill.
  14. 14. Save a few nice dill sprigs for decoration.
  15. 15. Stir the remaining chopped dill into the yogurt cream.
  16. 16. Carefully remove the cooked artichokes from the water.
  17. 17. Let the artichokes drain.
  18. 18. Remove the kitchen twine and lemon slices.
  19. 19. Scrape out the soft inner leaves and fine hairs from the core using a teaspoon.
  20. 20. Fill the hollowed-out artichokes with the yogurt cream.
  21. 21. Garnish the artichokes with the saved dill sprigs.
  22. 22. Serve the artichokes with fresh lemon wedges.
