🍽️ Spicy Artichokes with Chili Dressing

Ingredients
- 6 small, young artichokes
- salt
- juice of one lemon
- salt
- pepper (from the mill)
- 4 tbsp white wine vinegar
- 10 tbsp olive oil
- 0.5 carrot (sliced)
- 1 tbsp roughly chopped parsley (or thyme leaves)
- 1 onion (julienned)
- 1 clove garlic (chopped)
- 1 red chili pepper
- 1 sprig thyme
Instructions
- 1. Cut off the stems of the artichokes.
- 2. Pull off the lower leaves.
- 3. Cut off the hard tips of the remaining leaves.
- 4. Fill a pot with water and bring it to a boil.
- 5. Add salt, lemon juice, and thyme to the boiling water.
- 6. Cook the artichokes in the liquid for about 30 minutes.
- 7. Remove the artichokes from the pot.
- 8. Let the artichokes drain briefly.
- 9. Whisk vinegar, oil, salt, and pepper in a bowl.
- 10. Wash the chili pepper under running water.
- 11. Cut the chili pepper in half.
- 12. Remove the seeds and white membranes from the chili.
- 13. Add the carrot slices, herbs, onions, and garlic to the marinade.
- 14. Fold in the prepared artichokes and the chili.
- 15. Mix all ingredients well together.
- 16. Let the dish marinate for a while.
- 17. Serve the artichokes with baguette.
