🍽️ Crispy Shrimp on Artichoke Leaves

Ingredients
- 12 peeled fresh shrimp tails
- 5 tbsp olive oil
- salt
- white pepper
- 150 g mozzarella
- 1 tsp olive oil
- 1 tsp chopped thyme leaves
- 12 nice artichoke leaves (cooked)
Instructions
- 1. Make a shallow cut along the back of the shrimp, but do not cut all the way through. Carefully remove the dark vein.
- 2. Sear the shrimp quickly in hot olive oil in a pan for 2 to 3 minutes. Season lightly with salt and pepper and drizzle with lime juice.
- 3. Drain the mozzarella well. Cut it into small cubes and mix them with a little olive oil and thyme.
- 4. Arrange the artichoke leaves on a plate. Spread the cheese on top and place one shrimp on each leaf.
