  1. 1. Make a shallow cut along the back of the shrimp, but do not cut all the way through. Carefully remove the dark vein.
  2. 2. Sear the shrimp quickly in hot olive oil in a pan for 2 to 3 minutes. Season lightly with salt and pepper and drizzle with lime juice.
  3. 3. Drain the mozzarella well. Cut it into small cubes and mix them with a little olive oil and thyme.
  4. 4. Arrange the artichoke leaves on a plate. Spread the cheese on top and place one shrimp on each leaf.
