  2. 2. Wash the artichokes under running water.
  3. 3. Pull off the tough outer leaves.
  4. 4. Peel the stem of the artichoke.
  5. 5. Trim the sharp tips of the leaves with a knife.
  6. 6. Remove the fuzzy choke from the center of the artichoke.
  7. 7. Gently separate the leaves of the artichoke.
  8. 8. Rub the artichokes with the cut side of the halved lemon.
  9. 9. Wash the lemon balm and parsley.
  10. 10. Pluck the leaves of the herbs from the stems.
  11. 11. Chop the herbs finely.
  12. 12. Peel the shallot.
  13. 13. Peel the garlic cloves.
  14. 14. Chop the shallot and garlic finely.
  15. 15. Mix the chopped herbs with the shallot and garlic.
  16. 16. Season the mixture with salt and pepper.
  17. 17. Fill four heatproof ramekins with 100 milliliters of white wine each.
  18. 18. Add some olive oil to the ramekins.
  19. 19. Stuff the artichokes with the herb mixture.
  20. 20. Place the artichokes in the ramekins with the stem facing down.
  21. 21. Cover the ramekins with aluminum foil.
  22. 22. Bake the artichokes in the preheated oven for about 1 hour.
  23. 23. Check if the artichokes are tender.
