🍽️ Artichokes Roman Style

Ingredients
- 4 medium-sized, tender artichokes
- 1 lemon
- 1 bunch lemon balm
- 1 bunch parsley
- 1 shallot
- 4 garlic cloves
- coarse sea salt
- pepper (from the mill)
- 400 ml dry white wine
- 4 tbsp olive oil
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Wash the artichokes under running water.
- 3. Pull off the tough outer leaves.
- 4. Peel the stem of the artichoke.
- 5. Trim the sharp tips of the leaves with a knife.
- 6. Remove the fuzzy choke from the center of the artichoke.
- 7. Gently separate the leaves of the artichoke.
- 8. Rub the artichokes with the cut side of the halved lemon.
- 9. Wash the lemon balm and parsley.
- 10. Pluck the leaves of the herbs from the stems.
- 11. Chop the herbs finely.
- 12. Peel the shallot.
- 13. Peel the garlic cloves.
- 14. Chop the shallot and garlic finely.
- 15. Mix the chopped herbs with the shallot and garlic.
- 16. Season the mixture with salt and pepper.
- 17. Fill four heatproof ramekins with 100 milliliters of white wine each.
- 18. Add some olive oil to the ramekins.
- 19. Stuff the artichokes with the herb mixture.
- 20. Place the artichokes in the ramekins with the stem facing down.
- 21. Cover the ramekins with aluminum foil.
- 22. Bake the artichokes in the preheated oven for about 1 hour.
- 23. Check if the artichokes are tender.
