🍽️ Steamed Artichoke with Caper Dip

Ingredients
- 4 large artichokes
- 2 tbsp lemon juice
- 2 boiled eggs
- 1 small, red onion
- 4 tbsp chopped parsley
- 4 tbsp capers
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 8 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the artichokes under running water.
- 2. Trim the pointed leaf tips and the bottom of the stem using kitchen shears.
- 3. Rub the cut surfaces with lemon juice to prevent browning.
- 4. Place the artichokes side by side in a large pot.
- 5. Pour in enough water to cover the artichokes halfway.
- 6. Put the lid on and bring the water to a boil.
- 7. Steam the artichokes over medium heat for 25 to 30 minutes.
- 8. Check for doneness: The artichokes are ready when the outer leaves pull out easily.
- 9. Peel the boiled eggs and dice them into small cubes.
- 10. Peel the onion, halve it, and cut it into fine dice.
- 11. Add the egg cubes, onion cubes, chopped parsley, and capers to a bowl.
- 12. Add vinegar, lemon juice, and oil, and stir everything well.
- 13. Let the ingredients marinate in the dressing.
- 14. Season the sauce to taste with salt and pepper.
- 15. Serve the warm artichokes together with the caper dip.
- 16. Optionally, serve the dish with homemade herb crème fraîche (sour cream with herbs).
