  2. 2. Divide the fresh thyme sprigs evenly between both bottles.
  3. 3. Add the lemon zest to the first bottle.
  4. 4. Add the peeled and halved garlic cloves to the second bottle.
  5. 5. Blanch the peperoni briefly with boiling water.
  6. 6. Prick the peperoni several times with a fork.
  7. 7. Add the prepared peperoni to the bottles.
  8. 8. Fill the bottles completely with oil.
  9. 9. Seal the bottles tightly.
  10. 10. Store the bottles in a cool and dark place.
  11. 11. Let the oil infuse for at least one week.
