🍰 Arab Pineapple Fruit Compote

Ingredients
- 1 baby pineapple
- 300 g apples (2 apples)
- 3 drops rose water
- liquid sweetener (to taste)
- 4 tbsp liquid honey
- 1 packet saffron threads
- 500 g yogurt (1.5% fat)
- 40 g almond kernels (2 tbsp)
- 30 g pistachio kernels (2 tbsp)
- 1 handful unsprayed organic rose petals
Instructions
- 1. Peel the pineapple, cut it into quarters, and remove the tough core. Dice the flesh into small cubes.
- 2. Wash the apples and dry them thoroughly. Peel them only if you prefer. Quarter the apples, remove the core, and dice the flesh into small cubes.
- 3. Place the pineapple and apple cubes in a small saucepan. Simmer the fruits over medium heat for 15 to 20 minutes with a lid on.
- 4. Season the fruit mixture with rose water. Add a few drops of sweetener if needed. Transfer the compote into jars and refrigerate.
- 5. Rinse out the saucepan. Gently warm 2 tablespoons of honey together with the saffron threads in it to release the saffron's flavor. Stir in the yogurt.
- 6. Coarsely chop the almonds and pistachios using a large knife. Mix the nuts in a small bowl with the remaining honey.
- 7. Pour the saffron yogurt over the cold compote. Sprinkle the honey-nut mixture on top. Garnish with rose petals and serve.
