  1. 1. Peel the pineapple, cut it into quarters, and remove the tough core. Dice the flesh into small cubes.
  2. 2. Wash the apples and dry them thoroughly. Peel them only if you prefer. Quarter the apples, remove the core, and dice the flesh into small cubes.
  3. 3. Place the pineapple and apple cubes in a small saucepan. Simmer the fruits over medium heat for 15 to 20 minutes with a lid on.
  4. 4. Season the fruit mixture with rose water. Add a few drops of sweetener if needed. Transfer the compote into jars and refrigerate.
  5. 5. Rinse out the saucepan. Gently warm 2 tablespoons of honey together with the saffron threads in it to release the saffron's flavor. Stir in the yogurt.
  6. 6. Coarsely chop the almonds and pistachios using a large knife. Mix the nuts in a small bowl with the remaining honey.
  7. 7. Pour the saffron yogurt over the cold compote. Sprinkle the honey-nut mixture on top. Garnish with rose petals and serve.
