  1. 1. Rinse the apricots under running water.
  2. 2. Cut the fruits in half and remove the pits.
  3. 3. Wash the rosemary sprigs and pat them dry with a cloth.
  4. 4. Strip most of the needles from the stems.
  5. 5. Leave a few needles at the top ends for decoration.
  6. 6. Point the bottom ends of the rosemary stems with a knife.
  7. 7. Thread three apricot halves onto each rosemary stem.
  8. 8. Preheat the grill to high heat.
  9. 9. Place the skewers on the hot grill grate.
  10. 10. Grill the skewers from both sides for a total of 4 to 8 minutes.
  11. 11. Turn the skewers until distinct grill marks are visible.
  12. 12. Put the yogurt alternative into a bowl.
  13. 13. Add soy sauce, mustard, turmeric powder, salt, and pepper.
  14. 14. Stir the ingredients smooth with a spoon or whisk.
  15. 15. Remove the grilled skewers from the grill.
  16. 16. Place the skewers on the serving plates.
  17. 17. Drizzle some olive oil over the apricots.
  18. 18. Sprinkle chili flakes over them.
  19. 19. Serve the sauce in a separate bowl alongside.
