🍰 Apricot Skewers with Rosemary Aroma

Ingredients
- 12 large apricots
- 8 sprigs rosemary (long and sturdy)
- 350 g soy yogurt alternative
- 1 tsp mustard
- 0.25 tsp turmeric powder
- salt
- pepper
- 4 tbsp olive oil
- chili flakes
Instructions
- 1. Rinse the apricots under running water.
- 2. Cut the fruits in half and remove the pits.
- 3. Wash the rosemary sprigs and pat them dry with a cloth.
- 4. Strip most of the needles from the stems.
- 5. Leave a few needles at the top ends for decoration.
- 6. Point the bottom ends of the rosemary stems with a knife.
- 7. Thread three apricot halves onto each rosemary stem.
- 8. Preheat the grill to high heat.
- 9. Place the skewers on the hot grill grate.
- 10. Grill the skewers from both sides for a total of 4 to 8 minutes.
- 11. Turn the skewers until distinct grill marks are visible.
- 12. Put the yogurt alternative into a bowl.
- 13. Add soy sauce, mustard, turmeric powder, salt, and pepper.
- 14. Stir the ingredients smooth with a spoon or whisk.
- 15. Remove the grilled skewers from the grill.
- 16. Place the skewers on the serving plates.
- 17. Drizzle some olive oil over the apricots.
- 18. Sprinkle chili flakes over them.
- 19. Serve the sauce in a separate bowl alongside.
