🍰 Tasty Apricot Ice Cream

Ingredients
- 75 g Sugar
- 125 ml Apricot juice
- 3 tbsp Lemon juice
- 500 g Apricots
- 40 ml Apricot brandy
- 1 Egg white
Instructions
- 1. Wash the apricots thoroughly.
- 2. Halve the fruits and remove the pits.
- 3. Chop the flesh into coarse pieces.
- 4. Mix the sugar with the apricot juice and the lemon juice.
- 5. Cook the sugar mixture until it has the consistency of syrup.
- 6. Add the apricot pieces to the syrup mixture.
- 7. Cook the apricots until soft.
- 8. Puree the entire mixture until smooth.
- 9. Press the mixture through a fine sieve to smooth it out.
- 10. Season the mixture with a splash of apricot brandy.
- 11. Beat the egg whites until they are semi-stiff.
- 12. Gently fold the beaten egg whites into the apricot mixture.
- 13. Pour the mixture into an ice cream maker.
- 14. Let the ice cream freeze in the machine.
- 15. Alternatively, pour the mixture into a shallow metal tray.
- 16. Place the tray in the freezer.
- 17. Stir the mixture several times with a fork during the first hour.
- 18. This prevents the formation of large ice crystals.
