  1. 1. Wash the apricots thoroughly and remove the pits. Peel the ginger. Cut the vanilla pod lengthwise and scrape out the seeds with a knife.
  2. 2. Bring 250 milliliters of water to a boil together with the ginger, the vanilla pod, the vanilla seeds, and the cinnamon stick. Add the apricots and cook them for 6 to 8 minutes until soft.
  3. 3. Remove the apricots from the heat and let them cool down. Remove the ginger, the vanilla pod, and the cinnamon stick. Then puree the mixture finely using a hand blender.
