🍰 Apricot Yogurt Dessert

Ingredients
- 400 g greek yogurt
- 4 tbsp honey
- 300 g apricots (ripe)
- 3 tbsp walnut kernels
- 50 ml apricot juice
- 2 tbsp walnut praline
Instructions
- 1. Mix the yogurt with two tablespoons of honey until smooth.
- 2. Wash the apricots and pat them dry with a kitchen towel.
- 3. Halve the apricots and remove the pits.
- 4. Dice the fruit flesh into small cubes.
- 5. Place the apricot cubes in a small saucepan with two tablespoons of water.
- 6. Simmer the apricots over medium heat until soft.
- 7. Let the apricot mixture cool down completely.
- 8. Blend the cooled apricots until fine.
- 9. Stir in the apricot juice and the walnuts into the puree.
- 10. Layer the yogurt and the apricot mixture alternately into the bowls.
- 11. Make sure the top layer consists of yogurt.
- 12. Drizzle one tablespoon of honey over the yogurt layer.
- 13. Sprinkle the dessert with croquant (caramelized nut pieces).
- 14. Optionally replace part of the apricot juice with apricot liqueur.
