  1. 1. Mix the yogurt with two tablespoons of honey until smooth.
  2. 2. Wash the apricots and pat them dry with a kitchen towel.
  3. 3. Halve the apricots and remove the pits.
  4. 4. Dice the fruit flesh into small cubes.
  5. 5. Place the apricot cubes in a small saucepan with two tablespoons of water.
  6. 6. Simmer the apricots over medium heat until soft.
  7. 7. Let the apricot mixture cool down completely.
  8. 8. Blend the cooled apricots until fine.
  9. 9. Stir in the apricot juice and the walnuts into the puree.
  10. 10. Layer the yogurt and the apricot mixture alternately into the bowls.
  11. 11. Make sure the top layer consists of yogurt.
  12. 12. Drizzle one tablespoon of honey over the yogurt layer.
  13. 13. Sprinkle the dessert with croquant (caramelized nut pieces).
  14. 14. Optionally replace part of the apricot juice with apricot liqueur.
