  1. 1. Wash the apricots thoroughly and pour boiling water over them briefly. Then cut them in half and remove the pits. Cut the lemon in half and squeeze out the juice.
  2. 2. Puree half of the apricots together with the lemon juice until smooth. Cut the remaining apricots into very small cubes. Put the puree, the apricot cubes, and the jam sugar into a pot and let the mixture sit overnight.
  3. 3. Then bring the mixture to a boil over high heat while stirring constantly. Let it simmer for 4 minutes over high heat. Fill the hot jam into clean jars, seal them immediately, and let them cool down.
