🍳 Apricot Jam with Gooseberries and Anise

Ingredients
- 700 g apricots
- 400 g gooseberries
- 1 kg jam sugar
- 1 packet citric acid (powder)
- 8 star anise
- 2 cinnamon sticks
Instructions
- 1. Pour boiling water over the apricots.
- 2. Immediately rinse the fruits with cold water.
- 3. Peel the skin off the apricots.
- 4. Pit the apricots.
- 5. Cut the apricot flesh into small pieces.
- 6. Wash the gooseberries thoroughly.
- 7. Pat the gooseberries dry with a cloth.
- 8. Mix the gooseberries with the jam sugar.
- 9. Combine the apricot pieces with the sugar-gooseberry mixture.
- 10. Place the fruit mixture in the refrigerator overnight.
- 11. Place the cold fruit mixture into a pot.
- 12. Add the citric acid powder.
- 13. Add the star anise pods to the pot.
- 14. Add the cinnamon sticks to the pot.
- 15. Let the mixture boil for three minutes.
- 16. Remove the cinnamon sticks from the jam.
- 17. Fill the hot jam into prepared jars.
- 18. Seal the jars tightly with screw-top lids.
