🍽️ Delicate Apricot Compote

Ingredients
- 600 g apricots
- 1 lemon
- 1 vanilla bean (or 1/2 tsp vanilla powder as a substitute)
Instructions
- 1. Pour boiling water over the apricots to loosen the skin (this is called blanching).
- 2. Peel them, halve the fruits, and remove the pits.
- 3. Wash the lemon, pat it dry, and finely grate the zest.
- 4. Then squeeze the juice from the halved lemon.
- 5. Place the apricots and lemon juice with 100 milliliters of water in a pot and bring the mixture to a boil.
- 6. Cut the vanilla pod lengthwise, scrape out the seeds, and add both the seeds and the empty pod to the pot.
- 7. Let everything simmer gently for about 2 minutes.
- 8. Now add the apricot halves and let them cook lightly with the lid closed.
- 9. Remove the vanilla pod and serve the compote.
