  1. 1. Pour boiling water over the apricots to loosen the skin (this is called blanching).
  2. 2. Peel them, halve the fruits, and remove the pits.
  3. 3. Wash the lemon, pat it dry, and finely grate the zest.
  4. 4. Then squeeze the juice from the halved lemon.
  5. 5. Place the apricots and lemon juice with 100 milliliters of water in a pot and bring the mixture to a boil.
  6. 6. Cut the vanilla pod lengthwise, scrape out the seeds, and add both the seeds and the empty pod to the pot.
  7. 7. Let everything simmer gently for about 2 minutes.
  8. 8. Now add the apricot halves and let them cook lightly with the lid closed.
  9. 9. Remove the vanilla pod and serve the compote.
