  1. 1. Make a small cross-shaped cut into the apricots. Pour boiling water over them, immediately shock them in cold water, and peel off the skin. Then cut the fruits in half and remove the pits.
  2. 2. Wash half of the lemon under hot water and pat it dry. Grate the zest finely and squeeze out the juice.
  3. 3. Mix the lemon juice with 500 milliliters of water in a large pot and bring the mixture to a boil. Add the apricots, bring to a boil again, and then cook them over low heat for about 10 minutes with a lid on.
  4. 4. Divide the cooked fruits among six small bowls. Let the cooking liquid cool down and then pour it into the bowls as well.
  5. 5. Mix the quark with the sour cream and the lemon zest. Divide this cream evenly among the bowls.
  6. 6. Chop the almonds coarsely and sprinkle them over the finished dessert.
