🍳 Apricot Almond Spread

Ingredients
- 1 g organic orange
- 150 g dried dried apricots
- 70 g almond kernels
- 1.5 tbsp honey (25 g)
- 6 slices whole grain bread
- 1 apple (or other seasonal fruit)
Instructions
- 1. Rinse the orange under hot water and pat it dry. Then, grate 1 teaspoon of the peel using a fine grater.
- 2. Cut the orange in half and squeeze out the juice. Place the juice and the grated peel into a bowl.
- 3. Cut the apricots into small pieces and mix them into the orange juice. Cover the bowl and let the mixture soak for 8 to 10 hours (preferably overnight).
- 4. Place the almonds, honey, soaked apricots, and soaking liquid into a blender. Puree everything until smooth. Fill the spread into a clean screw-top jar.
- 5. For breakfast, take 2 tablespoons of spread each and smear it onto the bread slices. Cut wedges from the apple or use a melon baller to make small balls and garnish the toast with them.
