🍽️ Fruity Sorbet with Apricots and Mirabelles

Ingredients
- 12 apricots
- 1 lemon (zest)
- 150 g lavender honey
- 30 g glucose syrup
- 1 lemon (juice)
Instructions
- 1. Remove the pits from the mirabelles.
- 2. Puree the pitted mirabelles in a blender.
- 3. Press the puree through a fine sieve to make it completely smooth.
- 4. Finely chop the candied orange peel.
- 5. Put 200 milliliters of water, the sugar, and the candied orange peel into a pot.
- 6. Bring the mixture in the pot to a boil.
- 7. Stir in the glucose syrup until it has completely dissolved.
- 8. Mix the mirabelle puree with the lemon juice.
- 9. Freeze the mixture in an ice cream maker to make sorbet.
- 10. Follow the manufacturer's instructions while doing so.
- 11. Place the finished sorbet in the freezer until ready to serve.
- 12. Wash the apricots thoroughly.
- 13. Halve the apricots.
- 14. Put 75 milliliters of water, the lemon peel, and the honey into a pot.
- 15. Bring these ingredients in the pot to a boil.
- 16. Add the apricot halves.
- 17. Simmer the apricots covered on low heat.
- 18. Simmer them for 8 to 10 minutes.
- 19. Remove the pot from the heat.
- 20. Let the apricots cool down completely.
- 21. Divide the cooled apricot compote among glasses.
- 22. Top with a spoonful of mirabelle sorbet.
- 23. Serve the dessert.
