🍽️ Apricot-Thyme Jam

Ingredients
- 1 kg apricots (ripe)
- 500 g nectarine
- 4 tbsp lemon juice
- 4 sprigs thyme
- 500 g jam sugar (3:1)
Instructions
- 1. Wash the apricots and nectarines under running water.
- 2. Dry the fruits with a cloth.
- 3. Cut the fruits in half.
- 4. Remove the pits from the fruits.
- 5. Place the nectarines, half of the apricots, and the lemon juice into the blender.
- 6. Blend the mixture in the blender until it is fine and smooth.
- 7. Chop the remaining apricots into small pieces.
- 8. Place the fruit puree, the jam sugar, and the thyme into a pot.
- 9. Heat the mixture on the stove and stir constantly.
- 10. Let the jam simmer vigorously for about 4 minutes.
- 11. Remove the pot from the heat.
- 12. Remove the thyme sprigs from the jam.
- 13. Fill the hot jam into jars that have been rinsed with hot water beforehand.
- 14. Seal the jars immediately.
- 15. Let the jars cool down at room temperature.
