  1. 1. Wash the apricots and nectarines under running water.
  2. 2. Dry the fruits with a cloth.
  3. 3. Cut the fruits in half.
  4. 4. Remove the pits from the fruits.
  5. 5. Place the nectarines, half of the apricots, and the lemon juice into the blender.
  6. 6. Blend the mixture in the blender until it is fine and smooth.
  7. 7. Chop the remaining apricots into small pieces.
  8. 8. Place the fruit puree, the jam sugar, and the thyme into a pot.
  9. 9. Heat the mixture on the stove and stir constantly.
  10. 10. Let the jam simmer vigorously for about 4 minutes.
  11. 11. Remove the pot from the heat.
  12. 12. Remove the thyme sprigs from the jam.
  13. 13. Fill the hot jam into jars that have been rinsed with hot water beforehand.
  14. 14. Seal the jars immediately.
  15. 15. Let the jars cool down at room temperature.
