Ingredients
- 500 g apricots
- 125 g sugar
- juice of one lemon
- 500 ml white rum
- 2 sticks cinnamon
- 3 star anise
Instructions
- 1. Pour the lemon juice and sugar into a pot.
- 2. Heat the mixture on the stove.
- 3. Bring it to a boil until the sugar is completely dissolved.
- 4. Let the liquid simmer gently for about one minute.
- 5. Remove the pot from the heat.
- 6. Stir the rum into the warm mixture.
- 7. Wash the apricots thoroughly.
- 8. Pour boiling water over the fruits.
- 9. Peel the skin off the apricots.
- 10. Halve the fruits and remove the pits.
- 11. Place the apricots into a clean jar.
- 12. Place halved cinnamon sticks and star anise between the fruit layers.
- 13. Pour the prepared rum syrup over the fruits.
- 14. Fill the jar to the brim with the liquid.
- 15. Seal the jar tightly.
- 16. Let the fruits steep in the jar for about three weeks.
