🍽️ Fruity Apricot Chutney

Ingredients
- 1 onion
- 1 piece ginger (10 g)
- 200 g soft apricot
- 125 g small strawberries
- 1 chili
- 2 tbsp rapeseed oil
- 2 tsp curry powder
- 1 tbsp whole cane sugar
- 1 tbsp mustard seeds
- 6 tbsp white wine vinegar
- salt
Instructions
- 1. Peel the onion and cut it into coarse cubes.
- 2. Peel the ginger and chop it finely.
- 3. Cut the apricots into small cubes.
- 4. Wash the strawberries and remove the green stems.
- 5. Cut the chili pepper in half lengthwise.
- 6. Remove the seeds from the chili pepper.
- 7. Rinse the deseeded chili pepper briefly.
- 8. Finely chop the chili pepper.
- 9. Heat the oil in a pot over medium heat.
- 10. Add the onion cubes to the hot oil.
- 11. Sauté the onions for 2 to 3 minutes.
- 12. Add the apricot cubes to the pot.
- 13. Add the chopped chili to the pot.
- 14. Sprinkle the curry powder over the mixture.
- 15. Add the sugar to the pot.
- 16. Add the mustard seeds to the pot.
- 17. Stir all ingredients briefly.
- 18. Pour the vinegar into the pot.
- 19. Pour 150 milliliters of water into the pot.
- 20. Bring the mixture to a boil.
- 21. Reduce the heat to low.
- 22. Cover the pot with a lid.
- 23. Simmer the relish for 30 to 35 minutes.
- 24. Stir the mixture regularly while cooking.
- 25. Add the strawberries to the pot shortly before the end of the cooking time.
- 26. Season the relish with salt to taste.
