  2. 2. Immediately shock the fruit in a bowl of cold water.
  3. 3. Remove the softened skin from the fruit.
  4. 4. Cut the fruit in half.
  5. 5. Remove the pits.
  6. 6. Chop the fruit flesh into coarse cubes.
  7. 7. Weigh the fruit flesh and ensure you have about 500 grams.
  8. 8. Mix the jam sugar and lemon juice into the fruit.
  9. 9. Place the lid on the pot.
  10. 10. Let the mixture steep for three hours.
  11. 11. Add the cinnamon stick and liqueur to the pot.
  12. 12. Bring the mixture to a boil while stirring.
  13. 13. Let the jam simmer vigorously for about four minutes.
  14. 14. Stir constantly during this time.
  15. 15. Place a small dollop of the jam on a cold plate.
  16. 16. Check if the jam sets firmly.
  17. 17. If it is too liquid, add a little more sugar.
  18. 18. If so, cook the jam for a short while longer.
  19. 19. Remove the pot from the heat.
  20. 20. Remove the cinnamon stick from the jam.
