🍳 Apricot Peach Jam

Ingredients
- 300 g Peaches
- 300 g Apricots
- 500 g Jam sugar
- 1 untreated Lemon (juice and zest)
- 1 Cinnamon stick
- 60 ml Orange liqueur
Instructions
- 1. Pour boiling water over the peaches and apricots.
- 2. Immediately shock the fruit in a bowl of cold water.
- 3. Remove the softened skin from the fruit.
- 4. Cut the fruit in half.
- 5. Remove the pits.
- 6. Chop the fruit flesh into coarse cubes.
- 7. Weigh the fruit flesh and ensure you have about 500 grams.
- 8. Mix the jam sugar and lemon juice into the fruit.
- 9. Place the lid on the pot.
- 10. Let the mixture steep for three hours.
- 11. Add the cinnamon stick and liqueur to the pot.
- 12. Bring the mixture to a boil while stirring.
- 13. Let the jam simmer vigorously for about four minutes.
- 14. Stir constantly during this time.
- 15. Place a small dollop of the jam on a cold plate.
- 16. Check if the jam sets firmly.
- 17. If it is too liquid, add a little more sugar.
- 18. If so, cook the jam for a short while longer.
- 19. Remove the pot from the heat.
- 20. Remove the cinnamon stick from the jam.
- 21. Fill the jam into prepared jars.
- 22. Seal the jars well.
- 23. Place the jars upside down on their lids for a moment.
- 24. Let the jars cool slightly.
- 25. Turn the jars right side up.
- 26. Let the jam cool completely.
