  2. 2. Immediately rinse the fruits with cold water to stop the cooking process.
  3. 3. Remove the skin from the apricots.
  4. 4. Cut the fruits in half.
  5. 5. Remove the pits.
  6. 6. Dice the flesh into small cubes.
  7. 7. Mix the cubes with the lemon juice and the sugar.
  8. 8. Place the mixture in a pot.
  9. 9. Let the mixture simmer vigorously for 5 minutes over medium heat.
  10. 10. Add the almonds to the jam.
  11. 11. Fill the hot mixture into prepared, clean jars.
  12. 12. Seal the jars tightly.
  13. 13. Turn the jars upside down for 10 minutes.
  14. 14. Turn the jars right side up.
  15. 15. Let the jam cool down completely.
