🍽️ Apricot Lavender Jam

Ingredients
- 1 kg apricots
- 1 untreated lemon
- 400 g jam sugar (2:1)
- 40 ml rum
- 1 tbsp lavender flowers (freshly picked)
Instructions
- 1. Pour boiling water over the apricots.
- 2. Immediately rinse them with cold water to stop the cooking process.
- 3. Remove the skin from the fruits.
- 4. Cut the apricots in half.
- 5. Remove the pits.
- 6. Chop the fruits into small pieces.
- 7. Wash the lemon thoroughly under hot water.
- 8. Grate the zest finely.
- 9. Squeeze out the juice from the lemon.
- 10. Place the apricot pieces, lemon zest, lemon juice, and pectin sugar in a large pot.
- 11. Let the mixture rest for about 30 minutes.
- 12. Bring the mixture to a boil while stirring constantly.
- 13. Let it bubble vigorously for about 4 minutes.
- 14. Stir in the rum and the dried lavender flowers.
- 15. Perform a gel test to check if the jam has set properly.
- 16. Fill the hot jam to the brim into prepared, clean jars.
- 17. Seal the jars tightly immediately.
- 18. Let the jars cool down at room temperature.
