  5. 5. Remove the pits.
  6. 6. Chop the fruits into small pieces.
  7. 7. Wash the lemon thoroughly under hot water.
  8. 8. Grate the zest finely.
  9. 9. Squeeze out the juice from the lemon.
  10. 10. Place the apricot pieces, lemon zest, lemon juice, and pectin sugar in a large pot.
  11. 11. Let the mixture rest for about 30 minutes.
  12. 12. Bring the mixture to a boil while stirring constantly.
  13. 13. Let it bubble vigorously for about 4 minutes.
  14. 14. Stir in the rum and the dried lavender flowers.
  15. 15. Perform a gel test to check if the jam has set properly.
  16. 16. Fill the hot jam to the brim into prepared, clean jars.
  17. 17. Seal the jars tightly immediately.
  18. 18. Let the jars cool down at room temperature.
