🍳 Crunchy Bars with Apricots and Coconut

Ingredients
- 100 g dried apricots
- 30 g butter (2 tbsp)
- 50 g liquid honey
- 80 g whole cane sugar (4 tbsp)
- 0.5 organic orange
- 100 g spelt flakes
- 50 g coconut flakes
- 40 g chopped almond kernels (4 tbsp)
Instructions
- 1. Cut the apricots into fine cubes.
- 2. Put the butter, honey, and sugar into a small saucepan.
- 3. Heat the mixture on the stove until it starts to boil.
- 4. Rinse half of the orange under hot water.
- 5. Dry the orange with a cloth.
- 6. Grate one teaspoon of the orange peel.
- 7. Squeeze the juice out of the orange.
- 8. Set aside one tablespoon of the orange juice.
- 9. Stir the warm butter mixture with the orange juice, the peel, the spelt flakes, the coconut flakes, the almonds, and the apricot cubes.
- 10. Line a baking sheet with baking paper.
- 11. Get a moist rubber spatula ready.
- 12. Spread the mixture evenly on the tray.
- 13. Make sure the layer is about 1 to 1.5 centimeters thick.
- 14. Preheat the oven to 150 degrees Celsius conventional heat.
- 15. Place the tray on the middle rack.
- 16. Bake the bars for about 25 minutes.
- 17. Let the tray cool completely after baking.
- 18. Cut the cooled slab into individual bars.
