🍽️ Fruity Jelly with Apricots and Redcurrants

Ingredients
- 1 kg apricots
- 250 g redcurrants
- 100 g sugar
- 2 lemons (juice)
- 200 ml orange juice (freshly squeezed)
- 400 g jam sugar (2:1)
- 40 ml orange liqueur
Instructions
- 1. Wash the apricots thoroughly.
- 2. Halve the apricots and remove the pits.
- 3. Cut the fruit flesh into coarse cubes.
- 4. Wash the redcurrants.
- 5. Carefully remove the redcurrants from the stems.
- 6. Place the apricots and redcurrants into a large pot.
- 7. Add the sugar and lemon juice.
- 8. Stir the ingredients well.
- 9. Let the mixture sit for two hours.
- 10. Pour about 100 milliliters of water into the pot.
- 11. Bring the mixture to a boil on the stove.
- 12. Reduce the heat to a low setting.
- 13. Simmer the fruit for about 20 minutes.
- 14. Stir occasionally while cooking.
- 15. Place a clean cloth into a sieve.
- 16. Pour the cooked fruit mixture through the sieve.
- 17. Let the juice drip slowly through the cloth.
- 18. Do not squeeze the cloth tightly to keep the juice clear.
- 19. Measure the drained juice.
- 20. Top up the juice with orange juice to a total of 800 milliliters.
- 21. Add the jam sugar to the liquid.
- 22. Add the orange liqueur.
- 23. Bring the mixture back to a boil.
- 24. Boil the jelly mixture vigorously for four minutes.
- 25. Perform a setting test to check the consistency.
- 26. Fill the hot jelly into prepared, clean jars.
- 27. Seal the jars tightly with the lids.
- 28. Turn the sealed jars upside down.
- 29. Let the jars cool down completely.
- 30. Turn the jars upright again after cooling.
