🍽️ Honey Apricot Chicken Breast

Ingredients
- 550 g double chicken breast fillet (2 double chicken breast fillets)
- salt
- 3 apricots
- lemon balm
- 2 tsp honey
- curry powder
- 2 tbsp ghee
Instructions
- 1. Remove the skin and all sinews from the chicken breast fillets.
- 2. Season the fillets generously with salt on both sides.
- 3. Dice the apricot flesh into small cubes.
- 4. Finely chop the lemon balm leaves.
- 5. Slice the chicken breast fillets horizontally so they open up like a book.
- 6. Brush the inside surfaces of the opened fillets with honey.
- 7. Distribute the chopped lemon balm leaves and apricot cubes evenly over the meat.
- 8. Season the filling with curry powder.
- 9. Fold the meat back together.
- 10. Secure the breasts with toothpicks so they do not open.
- 11. Season the outside of the fillets with curry as well.
- 12. Heat clarified butter (purified butter) in a pan.
- 13. Fry the fillets in the hot fat for about 5 minutes until golden brown.
- 14. Cover the pan.
- 15. Finish cooking the meat for another 5 minutes per side.
- 16. Ensure the meat is fully cooked, as the time may vary depending on thickness.
- 17. Remove the toothpicks from the meat before serving.
- 18. Slice the chicken breasts into bite-sized pieces.
