  1. 1. Mix low-fat quark, 35 g honey, and vanilla powder in a bowl until smooth. Cover the bowl and place it in the refrigerator.
  2. 2. Roast walnut kernels in a pan without added fat over medium heat for 2 to 3 minutes until golden brown. Remove the pan from the heat, let the nuts cool, and then chop them coarsely.
  3. 3. Wash the apricots, halve them, and remove the pits. Slice the halves. Wash the thyme, shake it dry, and set half aside. Pluck the leaves from the remaining thyme.
  4. 4. Melt butter in a pan. Add the thyme sprigs and fry the apricot slices over medium heat for about 3 minutes until golden brown.
  5. 5. Spread the quark cream onto plates. Arrange the apricots on top and garnish with the roasted walnuts and thyme leaves. Drizzle the dessert with the remaining honey and serve.
