  1. 1. Wash the apricots thoroughly and pat them dry with a kitchen towel. Then cut them in half and remove the stone.
  2. 2. Take half of the apricots and chop them into coarse pieces. Place these pieces in a tall container that is wide enough for your immersion blender. Dice the remaining half into small cubes.
  3. 3. Wash the fresh coriander plant and shake it dry so no water remains. Pluck the leaves from the stems. Set aside a few nice leaves for decoration. Roughly chop the remaining coriander with a large knife.
  4. 4. Add the yogurt and salad cream to the roughly chopped apricots in the container. Now puree the mixture using an immersion blender (an electric blender you hold directly into the container) until completely smooth.
  5. 5. Season the sauce with curry powder and a pinch of salt to your liking. Now gently fold in the small apricot cubes and the chopped coriander. Sprinkle the finished dip with the reserved coriander leaves and serve.
