🍽️ Apricot and Cranberry Jam

Ingredients
- 3 kg fresh apricots
- 2 vanilla pods
- 100 g dried cranberries
- 750 g jam sugar (2:1)
Instructions
- 1. Pour boiling water over the apricots.
- 2. Immediately rinse the fruits with cold water to stop the cooking process.
- 3. Peel off the skin from the apricots.
- 4. Cut the fruits in half.
- 5. Remove the stones.
- 6. Chop the flesh into coarse cubes.
- 7. Slit the vanilla pods lengthwise.
- 8. Scrape out the vanilla seeds with the back of a knife.
- 9. Add the apricot cubes to a large pot.
- 10. Add the vanilla seeds.
- 11. Add the empty vanilla pods to the pot.
- 12. Add the cranberries to the pot.
- 13. Add the jam sugar to the pot.
- 14. Stir everything well.
- 15. Let the mixture stand for about 30 minutes so that the sugar draws out the fruit juice.
- 16. Bring the mixture to a boil while stirring constantly.
- 17. Let the jam bubble vigorously for about 4 minutes.
- 18. Perform the gel test.
- 19. Remove the vanilla pods from the jam.
- 20. Fill the hot jam into prepared, clean jars.
- 21. Seal the jars tightly.
- 22. Turn the jars upside down for 10 minutes.
- 23. Turn the jars right side up.
- 24. Let the jam cool down completely.
