  1. 1. Pour boiling water over the apricots.
  2. 2. Immediately rinse the fruits with cold water to stop the cooking process.
  3. 3. Peel off the skin from the apricots.
  4. 4. Cut the fruits in half.
  5. 5. Remove the stones.
  6. 6. Chop the flesh into coarse cubes.
  7. 7. Slit the vanilla pods lengthwise.
  8. 8. Scrape out the vanilla seeds with the back of a knife.
  9. 9. Add the apricot cubes to a large pot.
  10. 10. Add the vanilla seeds.
  11. 11. Add the empty vanilla pods to the pot.
  12. 12. Add the cranberries to the pot.
  13. 13. Add the jam sugar to the pot.
  14. 14. Stir everything well.
  15. 15. Let the mixture stand for about 30 minutes so that the sugar draws out the fruit juice.
  16. 16. Bring the mixture to a boil while stirring constantly.
  17. 17. Let the jam bubble vigorously for about 4 minutes.
  18. 18. Perform the gel test.
  19. 19. Remove the vanilla pods from the jam.
  20. 20. Fill the hot jam into prepared, clean jars.
  21. 21. Seal the jars tightly.
  22. 22. Turn the jars upside down for 10 minutes.
  23. 23. Turn the jars right side up.
  24. 24. Let the jam cool down completely.
