  4. 4. Slice the vanilla pod in half lengthwise.
  5. 5. Scrape out the small vanilla seeds with a knife.
  6. 6. Place the apricot strips, vanilla seeds, and honey in a pot.
  7. 7. Simmer the mixture over low heat for 3 minutes.
  8. 8. Spread the goat cheese onto both slices of bread.
  9. 9. Season the cheese breads lightly with salt and pepper.
  10. 10. Rinse the rosemary under running water.
  11. 11. Shake the rosemary dry.
  12. 12. Strip the needles from the rosemary stems.
  13. 13. Distribute the apricot strips over the cheese breads.
  14. 14. Sprinkle the rosemary needles on top.
  15. 15. Serve the dish.
