🍽️ Apricot Breads with Goat Cheese

Ingredients
- 4 apricots
- 0.5 vanilla pod
- 1 tsp honey
- 2 slices rye wholemeal bread
- 30 g goat cream cheese
- salt
- pepper
- 1 sprig rosemary
Instructions
- 1. Rinse the apricots under running water.
- 2. Halve the apricots and remove the pits.
- 3. Cut the apricot halves into thin strips.
- 4. Slice the vanilla pod in half lengthwise.
- 5. Scrape out the small vanilla seeds with a knife.
- 6. Place the apricot strips, vanilla seeds, and honey in a pot.
- 7. Simmer the mixture over low heat for 3 minutes.
- 8. Spread the goat cheese onto both slices of bread.
- 9. Season the cheese breads lightly with salt and pepper.
- 10. Rinse the rosemary under running water.
- 11. Shake the rosemary dry.
- 12. Strip the needles from the rosemary stems.
- 13. Distribute the apricot strips over the cheese breads.
- 14. Sprinkle the rosemary needles on top.
- 15. Serve the dish.
