🍽️ Fruity Apricot Bagels

Ingredients
- 500 g Spelt flour (Type 630)
- 1.5 packets dried yeast
- 3 tsp whole cane sugar
- 2 oranges
- 100 g dried apricots
- 30 g butter
- 1 tsp salt
- 5 g baking soda
- 1 egg white
- 1 tbsp amaranth puffs
Instructions
- 1. Put the flour, yeast, and two teaspoons of sugar into a large bowl.
- 2. Squeeze the oranges and mix 200 milliliters of juice with 200 milliliters of water.
- 3. Warm the juice-water mixture in a pot until it is lukewarm.
- 4. Cut the apricots into small cubes.
- 5. Add the lukewarm liquid, the apricots, 10 grams of butter, and the salt to the flour.
- 6. Knead the ingredients with the dough hooks of your hand mixer until you have a smooth dough.
- 7. Cover the bowl and let the dough rise in a warm place for about 30 minutes.
- 8. Melt the remaining butter in a small pot.
- 9. Brush a baking sheet with half of the melted butter.
- 10. Divide the dough into 12 equal-sized balls.
- 11. Place the dough balls on the prepared baking sheet.
- 12. Brush the balls with the remaining melted butter.
- 13. Cover the bagels and let them rise in a warm place for another 30 minutes.
- 14. Press a hole into the center of each dough ball with your index finger.
- 15. Dissolve the remaining sugar and baking soda in one liter of water.
- 16. Bring the water to a boil.
- 17. Remove the water from the heat so it is no longer bubbling.
- 18. Boil the bagels in batches for about one minute in the hot water.
- 19. Remove the bagels with a slotted spoon.
- 20. Let the bagels drain for a short moment.
- 21. Place the bagels on a baking sheet lined with baking paper.
- 22. Separate the egg into egg white and egg yolk.
- 23. Whisk the egg white with one teaspoon of water.
- 24. Brush the bagels with the egg white-water mixture.
- 25. Sprinkle the bagels with amaranth.
- 26. Fill a heatproof dish with hot water.
- 27. Place the dish with the water on the bottom of the preheated oven.
- 28. Bake the bagels at 225 degrees Celsius (convection 200 degrees Celsius, gas level 3-4) for about 20 minutes until golden brown.
