  1. 1. Put the flour, yeast, and two teaspoons of sugar into a large bowl.
  2. 2. Squeeze the oranges and mix 200 milliliters of juice with 200 milliliters of water.
  3. 3. Warm the juice-water mixture in a pot until it is lukewarm.
  4. 4. Cut the apricots into small cubes.
  5. 5. Add the lukewarm liquid, the apricots, 10 grams of butter, and the salt to the flour.
  6. 6. Knead the ingredients with the dough hooks of your hand mixer until you have a smooth dough.
  7. 7. Cover the bowl and let the dough rise in a warm place for about 30 minutes.
  8. 8. Melt the remaining butter in a small pot.
  9. 9. Brush a baking sheet with half of the melted butter.
  10. 10. Divide the dough into 12 equal-sized balls.
  11. 11. Place the dough balls on the prepared baking sheet.
  12. 12. Brush the balls with the remaining melted butter.
  13. 13. Cover the bagels and let them rise in a warm place for another 30 minutes.
  14. 14. Press a hole into the center of each dough ball with your index finger.
  15. 15. Dissolve the remaining sugar and baking soda in one liter of water.
  16. 16. Bring the water to a boil.
  17. 17. Remove the water from the heat so it is no longer bubbling.
  18. 18. Boil the bagels in batches for about one minute in the hot water.
  19. 19. Remove the bagels with a slotted spoon.
  20. 20. Let the bagels drain for a short moment.
  21. 21. Place the bagels on a baking sheet lined with baking paper.
  22. 22. Separate the egg into egg white and egg yolk.
  23. 23. Whisk the egg white with one teaspoon of water.
  24. 24. Brush the bagels with the egg white-water mixture.
  25. 25. Sprinkle the bagels with amaranth.
  26. 26. Fill a heatproof dish with hot water.
  27. 27. Place the dish with the water on the bottom of the preheated oven.
  28. 28. Bake the bagels at 225 degrees Celsius (convection 200 degrees Celsius, gas level 3-4) for about 20 minutes until golden brown.
