🍰 Apple Tart with Apricot Glaze

Ingredients
- 150 g spelt flour
- 150 g spelt wholemeal flour
- 1 tbsp honey
- 1 pinch salt
- 200 g butter
- 1 egg
- 1 kg tart apples
- 2 tbsp apricot jam
Instructions
- 1. Knead flour, honey, salt, butter, and egg into a shortcrust pastry (a crumbly dough that is easy to shape). Add a little cold water if needed. Wrap the dough in cling film and let it rest for one hour.
- 2. Wash, peel, and slice the apples into wedges. Line a tart pan with the dough. Prick the dough in a few places with a fork.
- 3. Arrange the apple wedges in overlapping rows on the dough. Bake the tart in a hot oven at 220 °C (convection 200 °C; gas mark 3–4) for 25 minutes until golden yellow. Boil apricot jam with a little water and brush it onto the still hot apple wedges.
