🍰 Crispy Apple Strudel with Breadcrumbs

Ingredients
- 250 g flour (plus flour for dusting)
- 1 tsp soft butter
- 125 ml lukewarm water
- 1 pinch salt
- 1 tsp white wine vinegar
- 1 large egg
- 50 g butter (melted, for brushing)
- 100 g breadcrumbs (toasted in a little butter in a pan and cooled)
- 1 kg tart cooking apples (such as Boskop), peeled, cored, sliced very thinly
- 100 g sugar
- 1 pinch ground cinnamon
- 50 g sultanas (raisins)
- 100 g butter (melted)
Instructions
- 1. Sift the flour onto a clean work surface.
- 2. Press a well into the center of the flour.
- 3. Stir the butter into the warm water until it dissolves.
- 4. Pour the butter-water mixture into the well.
- 5. Add salt, vinegar, and egg.
- 6. Mix the ingredients first with the tip of a knife.
- 7. Then work the mass into a dough with your hands.
- 8. If the dough seems too dry, add a little warm water.
- 9. Shape the dough into a ball.
- 10. Dust the work surface with flour.
- 11. Knead the dough for 5 to 7 minutes.
- 12. Knead until the dough is smooth and shiny.
- 13. Shape the dough back into a ball.
- 14. Cover the dough ball with an inverted bowl.
- 15. Let the dough rest for at least 30 minutes.
- 16. You can let the dough rest for up to 1 hour.
- 17. Preheat the oven to 180 degrees Celsius.
- 18. Line a baking sheet with parchment paper.
- 19. Cover a table with a clean cotton cloth.
- 20. Sprinkle some flour on the cloth.
- 21. Place the dough in the center of the cloth.
- 22. Roll the dough as thinly as possible into a circle.
- 23. Brush the edge of the dough sparingly with melted butter.
- 24. Gently stretch the dough apart with your hands.
- 25. Stretch the dough outwards from the center.
- 26. Stretch the dough between the cloth and the dough.
- 27. Stretch the dough until it is paper-thin.
- 28. Small tears in the dough are not a problem.
- 29. Sprinkle the bottom two-thirds of the dough with the breadcrumbs.
- 30. Then sprinkle the dough with the apples.
- 31. Sprinkle the dough with sugar.
- 32. Sprinkle the dough with cinnamon.
- 33. Sprinkle the dough with sultanas.
- 34. Leave the top third of the dough free.
- 35. Brush the free third with melted butter.
- 36. Save some butter for glazing.
- 37. Trim the dough edge evenly.
- 38. Gently roll up the dough, starting from the filled side.
- 39. Use the cloth as help when rolling up.
- 40. Place the strudel in a horseshoe shape on the prepared baking sheet.
- 41. Brush the strudel with the remaining butter.
- 42. Bake the strudel for 40 to 45 minutes in the hot oven.
- 43. Bake the strudel until it is golden brown and crispy.
- 44. Generously dust the strudel with powdered sugar.
- 45. Serve the strudel warm.
