🍰 Apple Stirred Cake with Cream Filling

Ingredients
- 150 g spelt flour Type 1050
- 100 g butter
- 50 g whole cane sugar
- 1 egg
- 1 pinch salt
- 4 tart apples
- 2 tbsp lemon juice
- 50 ml milk (3.5% fat)
- 200 ml whipping cream
- 3 egg yolks
Instructions
- 1. Knead flour, butter, cane sugar, egg, and salt into a shortcrust dough. Wrap in cling film and chill in the refrigerator for 30 minutes.
- 2. Roll out the dough thinly on a lightly floured surface. Line a springform pan with it, forming a border about 3 cm high.
- 3. Wash, peel, halve, core, and slice the apples into thin wedges. Drizzle with lemon juice. Arrange the apple wedges on the dough base and bake in a preheated oven at 200 °C (convection: 180 °C; gas: setting 3) for approx. 20 minutes.
- 4. Whisk milk, cream, and egg yolks together. Briefly open the oven, pour the cream mixture over the apples, and close the door again. Bake the tart for another approx. 20 minutes until golden brown. Let the cake cool slightly and serve lukewarm or cold, optionally dusted with powdered sugar.
