  3. 3. Put the apple juice, cinnamon stick, sugar, lemon zest, and lemon juice into a pot.
  4. 4. Bring the liquid to a boil.
  5. 5. Let the liquid reduce for a short time.
  6. 6. Add the apple pieces to the pot.
  7. 7. Cook the apples for about 10 minutes until they are soft.
  8. 8. Remove the cinnamon stick from the pot.
  9. 9. Puree the apple sauce with a blender.
  10. 10. Let the apple sauce cool in jars.
  11. 11. Melt the sugar in a hot pan.
  12. 12. Wait until the sugar caramelizes and turns light brown.
  13. 13. Add the almonds to the caramelized pan.
  14. 14. Line a baking sheet with parchment paper.
  15. 15. Spread the almond-sugar mixture thinly onto the baking sheet.
  16. 16. Let the almonds cool until they harden.
  17. 17. Whip the cream with the vanilla sugar until stiff.
  18. 18. Place a dollop of cream on the apple sauce.
  19. 19. Break off a piece of the hardened almond caramel.
  20. 20. Garnish the dessert with the almond piece.
