🍰 Apple sauce with crunchy caramelized almonds

Ingredients
- 600 g ripe apples (e.g. Boskop)
- 150 ml apple juice
- 1 cinnamon stick
- 2 tbsp sugar
- 1 tsp lemon zest
- 4 tbsp sugar
- 4 tbsp chopped almond kernels
- 100 ml whipping cream
- 1 tbsp vanilla sugar
Instructions
- 1. Peel the apples and remove the cores.
- 2. Cut the apples into large chunks.
- 3. Put the apple juice, cinnamon stick, sugar, lemon zest, and lemon juice into a pot.
- 4. Bring the liquid to a boil.
- 5. Let the liquid reduce for a short time.
- 6. Add the apple pieces to the pot.
- 7. Cook the apples for about 10 minutes until they are soft.
- 8. Remove the cinnamon stick from the pot.
- 9. Puree the apple sauce with a blender.
- 10. Let the apple sauce cool in jars.
- 11. Melt the sugar in a hot pan.
- 12. Wait until the sugar caramelizes and turns light brown.
- 13. Add the almonds to the caramelized pan.
- 14. Line a baking sheet with parchment paper.
- 15. Spread the almond-sugar mixture thinly onto the baking sheet.
- 16. Let the almonds cool until they harden.
- 17. Whip the cream with the vanilla sugar until stiff.
- 18. Place a dollop of cream on the apple sauce.
- 19. Break off a piece of the hardened almond caramel.
- 20. Garnish the dessert with the almond piece.
- 21. Serve the dish.
