🍰 Moist Apple Cake with Cream Topping and Pistachios

Ingredients
- 100 g flour
- 125 g sugar
- 100 g margarine
- 2 packets vanilla sugar
- 1 tsp baking powder
- 2 eggs
- 750 g apples
- 150 ml apple juice
- 0.5 tsp cinnamon
- 1 packet vanilla pudding powder
- 400 g whipping cream
- powdered sugar (to sweeten the cream, to taste)
- 40 g pistachios
Instructions
- 1. Turn on the oven to 175 degrees Celsius with top and bottom heat.
- 2. Peel the apples and grate them using a fine grater.
- 3. Mix flour, 100 grams of sugar, margarine, a packet of vanilla sugar, baking powder, and eggs with a hand mixer until the batter is smooth.
- 4. Gently fold the grated apples into the batter using a spoon.
- 5. Line a springform pan with baking paper and pour the batter into it.
- 6. Bake the cake for about 30 minutes at 175 degrees Celsius.
- 7. Check the baking time by inserting a wooden skewer into the center.
- 8. Remove the cake from the pan and take off the hard crust edge.
- 9. Place a cake ring tightly around the cake base.
- 10. Peel the remaining apples and cut them into small cubes.
- 11. Put the apple cubes into a pot with 75 milliliters of apple juice, cinnamon, 2 tablespoons of sugar, and the remaining vanilla sugar.
- 12. Slowly bring the mixture to a boil.
- 13. Simmer the apples for another 5 minutes.
- 14. Mix pudding powder with the remaining apple juice in a separate bowl until smooth.
- 15. Stir the pudding mixture into the boiling apples.
- 16. Let the filling boil for another 1 minute.
- 17. Remove the pot from the heat and spread the warm filling evenly over the cake base.
- 18. Place the cake in the refrigerator for 1 to 2 hours until the filling is firm.
- 19. Whip the cream until stiff.
- 20. Sweeten the cream to your taste.
- 21. Spread two-thirds of the cream evenly over the cake.
- 22. Fill the remaining cream into a piping bag fitted with a star tip.
- 23. Pipe small rosettes of cream onto the cake.
- 24. Sprinkle the finished cake with pistachios.
