🍰 Juicy Apple Cake with Crunchy Coconut Sugar Topping

Ingredients
- 4 Eggs
- 200 g Coconut blossom sugar
- 300 g Coconut milk
- 0.5 tsp Cinnamon powder
- 400 g Wheat flour Type 1050
- 2 tsp Baking powder
- 300 g Coconut flakes
- 4 Apples
- 0.5 tsp Vanilla powder
- 4 Egg whites
- Salt
- 100 g Demerara sugar
Instructions
- 1. Peel the apples.
- 2. Cut the apples in half.
- 3. Remove the core from the apple halves.
- 4. Cut the apple halves into wedges.
- 5. Add the eggs, coconut blossom sugar, coconut milk, and cinnamon to a bowl.
- 6. Whisk the ingredients in the bowl vigorously with a whisk.
- 7. Add flour, baking powder, and 100 grams of coconut flakes to a separate bowl.
- 8. Gently stir the dry mixture into the egg batter.
- 9. Lightly grease a baking tray if necessary.
- 10. Spread the batter evenly onto the baking tray.
- 11. Arrange the apple wedges neatly on top of the batter.
- 12. Add a pinch of salt to the egg whites.
- 13. Whip the egg whites until very stiff and firm.
- 14. Gently fold the demerara sugar into the egg whites.
- 15. Add the remaining coconut flakes to the egg white mixture.
- 16. Spread the coconut mixture evenly over the topped batter.
- 17. Preheat the oven to 180 degrees Celsius conventional heat.
- 18. Bake the cake for 40 minutes.
- 19. Let the cake cool down completely.
- 20. Cut the cake into pieces.
