  1. 1. Sift both types of flour into a large bowl. Make a small well in the center. Dissolve the yeast in one spoonful of sugar and half of the milk. Pour the mixture into the well, lightly dust the edges with flour, and let the dough rest under a cloth for about 10 minutes.
  2. 2. Add the eggs, salt, and butter to the dough. Use the dough hooks of a hand mixer to knead everything into a smooth dough. Cover the bowl with a damp cloth and let the dough rise at room temperature for about 1 hour.
  3. 3. Peel the apples, cut them into quarters, and remove the core. Slice the quarters into thin wedges. Squeeze the juice from half of the lemon. Mix the apple wedges with the lemon juice and cinnamon.
  4. 4. Knead the dough briefly again and roll it out thinly on a lightly floured surface. Line a springform pan with baking paper and place the dough inside. Arrange the apple wedges decoratively on the bottom. Pass the apricot jam through a sieve and spread it over the cake.
  5. 5. Bake the cake in the preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for 20 to 30 minutes.
