🍳 Fresh Apple Jelly with Mint

Ingredients
- 4 kg tart apples
- 1 handful mint
- 12 g apple pectin
- 500 g jam sugar (2:1)
Instructions
- 1. Wash the apples, cut them into quarters, and remove the core. Juice the apple pieces. Measure exactly 1 liter of apple juice and pour it into a large pot.
- 2. Rinse the mint briefly under cold water and shake it dry. Set aside 5 leaves. Finely chop the rest of the mint.
- 3. Heat the juice to about 50 degrees Celsius. Add the sugar, which is already mixed with pectin (a gelling agent), to the juice. Stir constantly and bring the mixture to a boil. Let it bubble vigorously for 4 minutes and check if the jelly sets (gel test).
- 4. Now stir the chopped mint into the hot mixture. Fill the jelly to the brim into the jars. Place one mint leaf on each jar, close them, and let the jelly cool down.
