🍽️ Apple-Onion Couscous

Ingredients
- Salt
- 125 g Couscous
- 100 g Onions (2 Onions)
- 6 sprigs Mint
- 150 g small Apples (1 small Apple)
- 2 tbsp Olive Oil
- 75 ml classic Vegetable Broth
- Pepper
- 180 g Shrimp (without head and shell, 6 Shrimp)
Instructions
- 1. Bring 180 milliliters of water to a boil with a pinch of salt. Stir in the couscous, cover the pan, and let the grains swell for ten minutes.
- 2. Peel the onions, cut them in half, and slice them into thin rings.
- 3. Wash the mint and shake off excess water. Pluck the leaves from the stems and chop them coarsely.
- 4. Wash the apple, cut it into quarters, and remove the core. Dice the flesh into small cubes.
- 5. Heat one tablespoon of oil in a non-stick pan. Sauté the onion slices for two minutes. Add the apple pieces and cook them briefly together.
- 6. Fluff up the couscous with a fork. Mix it with the mint and the broth into the onion vegetables. Season everything with salt and pepper.
- 7. Rinse the shrimp briefly in a sieve and pat them completely dry with kitchen paper.
- 8. Heat a grill pan and add the remaining oil. Fry the shrimp for two minutes on each side. Season them with salt and pepper. Serve the shrimp together with the apple-onion couscous.
