  1. 1. Bring 180 milliliters of water to a boil with a pinch of salt. Stir in the couscous, cover the pan, and let the grains swell for ten minutes.
  2. 2. Peel the onions, cut them in half, and slice them into thin rings.
  3. 3. Wash the mint and shake off excess water. Pluck the leaves from the stems and chop them coarsely.
  4. 4. Wash the apple, cut it into quarters, and remove the core. Dice the flesh into small cubes.
  5. 5. Heat one tablespoon of oil in a non-stick pan. Sauté the onion slices for two minutes. Add the apple pieces and cook them briefly together.
  6. 6. Fluff up the couscous with a fork. Mix it with the mint and the broth into the onion vegetables. Season everything with salt and pepper.
  7. 7. Rinse the shrimp briefly in a sieve and pat them completely dry with kitchen paper.
  8. 8. Heat a grill pan and add the remaining oil. Fry the shrimp for two minutes on each side. Season them with salt and pepper. Serve the shrimp together with the apple-onion couscous.
