  1. 1. Rinse the lemon under hot water and pat it dry. Grate the zest very finely using a grater.
  2. 2. Put flour, oat flakes, sugar, the lemon zest, and a pinch of salt into a bowl and mix everything well.
  3. 3. Add the eggs and the butter. Work the ingredients with the dough hooks of your hand mixer until a crumbly dough forms.
  4. 4. Now knead the dough into a smooth ball with your hands and divide it into two equal halves.
  5. 5. Line a baking tray with baking paper. Place one half of the dough on it and cover it with cling film. Roll the dough very thin using a rolling pin. Place the second half of the dough on a piece of cling film, cover it with a second piece, and roll it out very thin as well.
  6. 6. Chill the dough sheets in the refrigerator for about 1 hour. Then take the dough half from the tray and top it with about half of the apple slices. Place half a walnut in the center of each apple slice.
  7. 7. Remove the top layer of film from the second dough sheet. Carefully lift the dough sheet using the bottom layer of film and place it on the topped dough. Press the edges well. Remove the remaining film.
  8. 8. Bake the dough in the preheated oven at 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas mark 2–3) on the middle rack for about 15 minutes.
  9. 9. Distribute the remaining apple slices evenly over the baked pastry.
  10. 10. Warm the apple jelly in a small saucepan. Brush the still warm pastry with it and cut it into small pieces. Let it cool on a cutting board.
