Ingredients
- 2 tsp grated orange peel
- 120 ml orange juice (juice of 2 oranges)
- 150 g crème fraîche
- salt
- 400 g celeriac
- 1 apple
- 2 tbsp sunflower sprouts (or others)
- 2 dried apricots
- 2 tsp pink peppercorns
Instructions
- 1. Whisk the orange juice, grated orange peel, creme fraiche, and a pinch of salt in a bowl until smooth.
- 2. Peel the celery, wash it, and cut it into thin strips (julienne) or grate it coarsely. Immediately fold the celery strips into the prepared sauce.
- 3. Wash the apple, quarter it, remove the core, and slice the flesh into strips. Gently fold the apple slices into the celery mixture.
- 4. Rinse the sprouts briefly and let them drain. Cut the apricots into thin strips, add them to the salad along with the pink peppercorns and sprouts, and mix everything. Serve the salad with whole grain rolls.
