🍰 Layered Apple Cream Cake with Crunchy Nuts

Ingredients
- 4 Apples
- 125 ml Apple juice
- 2 tbsp Jam sugar
- a few drops Lemon juice
- 25 g each Almonds, Hazelnuts and Walnuts
- 3 tbsp Sugar
- some Oil
- 400 g Sour cream
- 2 tbsp Sugar
- 100 g Whipping cream
- 1 packet Vanilla sugar
- Mint
Instructions
- 1. Peel the apples and remove the cores.
- 2. Cut the fruit into thin slices.
- 3. Simmer the apple slices with the apple juice for about three minutes.
- 4. Stir the jam sugar into the apple slices.
- 5. Let the mixture simmer gently for another three minutes.
- 6. Season the compote with a few drops of lemon juice.
- 7. Set the apple mixture aside to cool down.
- 8. Roughly chop the almonds, hazelnuts, and walnuts.
- 9. Melt the sugar until it caramelizes.
- 10. Toss the nuts briefly in the caramel.
- 11. Spread the nuts on a piece of aluminum foil that has been lightly greased with oil.
- 12. Allow the nuts to cool completely.
- 13. Mix the sour cream with the sugar.
- 14. Whip the cream until stiff.
- 15. Gradually sprinkle in the vanilla sugar while whipping the cream.
- 16. Gently fold the whipped cream into the sour cream mixture.
- 17. Crumble or chop the cooled nut brittle into small pieces.
- 18. Layer the cooled apple compote and the sour cream-whipped cream mixture alternately in a bowl.
- 19. Sprinkle the layers with the nut pieces.
- 20. Serve the dessert garnished with fresh mint.
