  6. 6. Season the compote with a few drops of lemon juice.
  7. 7. Set the apple mixture aside to cool down.
  8. 8. Roughly chop the almonds, hazelnuts, and walnuts.
  9. 9. Melt the sugar until it caramelizes.
  10. 10. Toss the nuts briefly in the caramel.
  11. 11. Spread the nuts on a piece of aluminum foil that has been lightly greased with oil.
  12. 12. Allow the nuts to cool completely.
  13. 13. Mix the sour cream with the sugar.
  14. 14. Whip the cream until stiff.
  15. 15. Gradually sprinkle in the vanilla sugar while whipping the cream.
  16. 16. Gently fold the whipped cream into the sour cream mixture.
  17. 17. Crumble or chop the cooled nut brittle into small pieces.
