🍽️ Classic Gratin with Smoked Pork, Potatoes, and Apple

Ingredients
- 250 g Smoked Pork (boneless)
- 250 g boiled potatoes (from the day before)
- 2 tbsp Butter
- Salt
- Pepper (from the mill)
- 400 g Sauerkraut (pre-cooked)
- 200 g Sour cream
- 100 g Whipping cream
- 3 Eggs
- 75 g grated cheese (e.g. Alpine cheese)
- Nutmeg (freshly grated)
- 1 Apple
- Parsley
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Dice the smoked pork shoulder into small cubes.
- 3. Peel the potatoes.
- 4. Cut the potatoes into 2 cm cubes.
- 5. Sauté the pork shoulder briefly in hot butter.
- 6. Add the potatoes.
- 7. Cook everything together.
- 8. Season the mixture with salt and pepper.
- 9. Transfer the mixture to a baking dish.
- 10. Drain the sauerkraut.
- 11. Spread the sauerkraut evenly over the potato and pork mixture.
- 12. Whisk half of the sour cream with the cream until well combined.
- 13. Add 2 eggs to the sour cream and cream mixture.
- 14. Add one-third of the cheese.
- 15. Whisk the sauce until well combined.
- 16. Season the sauce with salt, pepper, and nutmeg.
- 17. Pour the sauce over the sauerkraut layer.
- 18. Wash the apple.
- 19. Core the apple.
- 20. Slice the flesh into thin pieces.
- 21. Arrange the apple slices on top of the sauerkraut.
- 22. Mix the remaining sour cream with one egg.
- 23. Season this mixture.
- 24. Spoon this mixture over the gratin.
- 25. Sprinkle with the remaining cheese.
- 26. Scatter the parsley leaves on top.
- 27. Bake in the preheated oven for about 45 minutes until golden brown.
