  2. 2. Dice the smoked pork shoulder into small cubes.
  3. 3. Peel the potatoes.
  4. 4. Cut the potatoes into 2 cm cubes.
  5. 5. Sauté the pork shoulder briefly in hot butter.
  6. 6. Add the potatoes.
  7. 7. Cook everything together.
  8. 8. Season the mixture with salt and pepper.
  9. 9. Transfer the mixture to a baking dish.
  10. 10. Drain the sauerkraut.
  11. 11. Spread the sauerkraut evenly over the potato and pork mixture.
  12. 12. Whisk half of the sour cream with the cream until well combined.
  13. 13. Add 2 eggs to the sour cream and cream mixture.
  14. 14. Add one-third of the cheese.
  15. 15. Whisk the sauce until well combined.
  16. 16. Season the sauce with salt, pepper, and nutmeg.
  17. 17. Pour the sauce over the sauerkraut layer.
  18. 18. Wash the apple.
  19. 19. Core the apple.
  20. 20. Slice the flesh into thin pieces.
  21. 21. Arrange the apple slices on top of the sauerkraut.
  22. 22. Mix the remaining sour cream with one egg.
  23. 23. Season this mixture.
  24. 24. Spoon this mixture over the gratin.
  25. 25. Sprinkle with the remaining cheese.
  26. 26. Scatter the parsley leaves on top.
  27. 27. Bake in the preheated oven for about 45 minutes until golden brown.
